Salad with poached quail eggs

Spring salad with poached quail eggs is bursting with freshness and special flavours. In terms of its simplicity, it’s a great dish to bring to work or serve alongside a roast.

You will need:
• Quail eggs from Risto Ränk Farming
• a salad mix to your liking
• cucumber
• tomato
• seed mix
• mozzarella
• Wösel salad dressing
• salt, pepper, chilli flakes

Salad with poached quail eggs preparation:

Bring the water to a boil in a small pot. At the same time, crack open the quail eggs in different bowls. (PS! From Risto Ränk Farming you will get extremely comfortable quail egg scissors, which will make this procedure entirely painless). When the water boils, add a little vinegar to the water. With a spoon, stir the water in a saucepan and pour in the eggs one by one.

Let the egg swirl for a while and transfer with a spoon to dry on a napkin or sieve, although it can be directly placed on a salad or served as an accompaniment to other food. Sprinkle a little pepper and salt on top. Voilà, your fine poached quail eggs are ready.

To make a salad, chop the mozzarella, tomato and cucumber. Mix all the ingredients of the salad in a bowl with the seeds and Wösel salad dressing. Serve on a plate and pour poached eggs on top. Of course, chicken, for example, is definitely suitable here, so feel free.
